No-Bake Peanut Bites

No Bake Peanut Bites recipe. These high-energy bites are so easy to make and taste delicious. They are very nutritious and a good source of protein, healthy carbs, vitamins and minerals. Makes: 24 bites
Prep Time: 15 minutes
Calories: 2 bites = 100kcal
Steps: 4 and 5

Ingredients

50g dried apricots
80g porridge oats
80g no-added sugar peanut butter
2 tbsp sunflower seeds
1 tbsp clear honey
A few drops of vanilla extract
Water or lemon juice to mix
40g shredded unsweetened coconut

Directions

1. Blitz the dried apricots, oats, peanut butter, sunflower seeds, honey and vanilla in a blender or food chopper until you have a rough paste. Add a little water or lemon juice to bind the mixture if it’s too dry.

2. Divide the mixture into 24 small pieces and shape each one into a small ball, rolling them gently in the coconut in a shallow bowl until lightly coated.

3. Chill in the fridge for at least 30 minutes to firm them up before eating. You can store them in the fridge for up to 2 weeks or even freeze them.
