Mix it Up: Soup as a Sauce

Remember, this comes from your daily product allowance and isn’t an ‘extra’, you should have an extra glass of water too to make up for having less in the soup!

Chicken al Funghi

Make up your Chicken and Mushroom Soup to a sauce like consistency – start with 100ml of hot (not boiling) water, blend as usual, add more water if you want a thinner consistency, sautee some mushrooms in a pan with some spray oil, place them on top of a baked or grilled chicken breast and smother in your special CWP sauce, season with lots of black pepper, add a side of green beans. Almost as good as your local Italian restaurant!

Ratatouille

Chop up some chunky vegetables (classically aubergine, courgette, peppers, tomatoes, onion – check what and how much you’re allowed on your Step) and fry with garlic and spray oil in a pan until golden brown or softened. Make up your Cambridge Weight Plan Tomato and Basil Soup to a sauce as described above and mix in your vegetables, maybe a little balsamic vinegar to taste. You could add beans to this to make up your protein allowance. It would also be super tasty with prawns!

Spicy Chinese Curry

Our most popular soup, Oriental Chilli, can be ‘souped’ up too into a fabulous Chinese curry. Select vegetables from your allowed list such as baby corn, pak choi, mangetout and Chinese cabbage, and cook in a pan with spray oil until soft, add some cooked chicken or prawns to the mix and then add your oriental soup as a sauce. If you’re following Step 3 or above serve up with a side of rice. Who needs a Friday night takeaway when you’ve got CWP!
